Said to be sacred to the Scandinavian goddess of love, Hulda, honey-scented Elderberry Flowers (Sambucus nigra) have a long and varied history. Early on, Elderberry Flowers developed a reputationh for great powers of good-one physician was said to tip his hat in respect every time he passed the plant. Also, it supposedly had great powers of evil- if seen in a dream, it meant illness was on the way.
While such is the stuff of legends and folklore, there are many health benefits for Elderberry Flowers. A facial steam using Elderberry Flowers is said to keep the skin soft and clean and is a good tonic for mature or sallow skin. Used as a dye, the leaves will colorfabric yellow or green, while the berries give a lovely violet hue. In cooking, Elderberry Flowers can be added to jam, jellies, tarts, puddings, chutney and fritter.
